I tried this soup at a church dinner and it was awesome. So yummy and healthy too! Really easy to make. My husband loved it too! You can use fajita seasoning in place of taco seasoning. Ingredients:
3 cups low sodium chicken broth |
4 ounces cooked chicken breasts, shredded |
1 (14 ounce) can diced tomatoes, undrained |
1/2 cup canned corn kernel |
1 small onion, chopped |
1 tablespoon fresh jalapeno pepper, chopped |
1 tablespoon lime juice |
1 tablespoon taco seasoning mix |
1 teaspoon instant minced garlic |
1/4 teaspoon ground cumin |
1/4 teaspoon chili powder |
Directions:
1. In a medium pot sprayed with nonstick spray, cook onions, garlic,seasoning, and spices over medium heat until onions soften, 3 to 5 minutes 2. Add chicken broth and bring to a boil. Then reduce heat to low and simmer for 10 minutes. 3. Add the corn and tomatoes, and continue to cook for 5 minutes. 4. Add chicken,jalapeno, and lime juice. Stir for 3minutes to thoroughly blend flavors. Simmer for about 20 to 30 minutes. |
