This dish puts a little non traditional spin on twice baked potatoes. Goes great with pork, chicken and beef. Ingredients:
2 bulbs roasted garlic |
8 medium to large red potatoes-peeled and sliced |
1 tbsp salt |
1/2 stick butter |
1/4 cup 1/2 and 1/2 |
3 cups sharp cheddar cheese-shredded |
1 large white onion- sliced |
2tbsp olive oil and 2 tbsp butter |
(2) 4oz cans hot green chilis |
Directions:
1. pre heat oven to 400 degrees. 2. at 400 degrees roast garlic for 20min or till soft... take out and let cool. 3. start boiling potatoes in water and 1 TBSP of salt. 4. while boiling potatoes, camelize onion with olive oil and 2 TBSP butter till golden in saute pan. 5. peel garlic cloves, mash and add to the onion mixture. 6. after potatoes are tender...drain off water and mash with 1/2 stick butter, 1/2 and 1/2 and 1 cup cheese. 7. place potatoes in greased casserole dish 8. spread chilis over potatoes 9. spread onion and garlic mixture over chilis 10. sprinkle remaining cheese over onion and garlic mixture 11. bake covered at 400 degrees for 20 minutes |
