Ingredients:
cooking spray |
8 ounces smoked turkey kielbasa, sliced |
2 teaspoons vegetable oil |
1 cup chopped onion |
1 cup chopped seeded poblano chile |
3/4 cup chopped celery |
4 garlic cloves, minced |
3 (15.8-ounce) cans red beans, rinsed and drained |
1 cup water |
1 tablespoon chopped fresh or |
1 teaspoon dried oregano |
1 1/2 tablespoons chopped canned chipotle chile in adobo sauce |
1/4 teaspoon salt |
2 (14 1/2-ounce) cans diced tomatoes with garlic, basil, and oregano, un-drained |
1 (8-ounce) can no-salt-added tomato sauce |
9 cups hot cooked rice |
Directions:
1. Place a Dutch oven coated with cooking spray over medium-high heat until hot. Add kielbasa; sauté 4 minutes or until lightly browned. Remove from pan. 2. Heat oil in pan over medium-high heat. Add onion and next 3 ingredients. Sauté 8 minutes or until tender. Stir in beans and next 6 ingredients. Bring to a boil; cover, reduce heat, and simmer 20 minutes. Serve red beans over hot cooked rice. |
