Kicked Up Irish Soda Bread

Another one from the Murphys cook book..this one is from my Aunt Marg too. I love the taste of this bread.
Ingredients:
3 cups all purpose flour
1/2 tsp baking soda
1/2 cup dark raisins
1 cup buttermilk
1/2 cup sugar
1/2 tsp salt
3 lg. eggs
1/2 tbsp. veg. oil
Directions:
1. Preheat oven to 350*.
2. Lightly grease 9 inch round cake pans and set aside.
3. Combine flour, sugar,soda, salt and raisins in a large bowl.
4. In another bowl combine eggs, oil and buttermilk mixing until the eggs are beaten
5. Move the dry ingredients to the side of the large bowl making a well.
6. Pour liquid ingredients into well
7. Fold dry ingredients ove the liquid with your hands until the dough is sticky.
8. Scoop it from the bowl and divide between two pans.
9. Bake 1 hour
10. Test for doneness with sharp knife makeing the shape of a Cross in center of each loaf, if knife comes out clean , bread is done.
