Slightly adapted from Laurel's Kitchen (old edition.) I think it's supposed to serve four but we got three meals for two out of it. Ingredients:
2 tablespoons oil |
2 cloves |
1 piece cinnamon stick |
3 cardamom pods |
1 dash turmeric powder |
2 tablespoons ground fenugreek (i didn't use but may try in the future) |
1 onion |
1 bell pepper |
2 cups brown rice |
6 cups water |
2 teaspoons salt |
1 cup split peas |
Directions:
1. Remove cardamom seeds from pods and saute spices in oil in large pot. 2. Add chopped onions and bell pepper; saute until onion is soft. 3. Add rice and cook for 5 minutes. 4. Add water and salt and boil; cook on low for 20 minutes. 5. Add split peas and cook for 35 minutes more. |
