Ingredients:
2/3 cup boiling water |
1/2 cup bulgur (cracked wheat), uncooked |
5 ounces lean ground lamb |
3 tablespoons chopped fresh parsley |
3 tablespoons finely chopped onion |
2 teaspoons pine nuts, chopped |
1 clove garlic, minced |
1/8 teaspoon salt |
1/8 teaspoon pepper |
dash of ground allspice |
vegetable cooking spray |
1 (8-inch) pita bread round, cut in half crosswise |
4 green leaf lettuce leaves |
1/2 cup alfalfa sprouts |
3 tablespoons fat-free cucumber dressing |
Directions:
1. Pour water over bulgur in a small bowl; cover and let stand 15 minutes. Drain thoroughly. Combine bulgur, lamb, and next 7 ingredients in a medium bowl, stirring well. Shape mixture into 10 (1 1/2-inch) meatballs. 2. Place meatballs on rack of a broiler pan coated with cooking spray. Broil 5 1/2 inches from heat (with electric oven door partially opened) 30 minutes or until done. 3. Line each pita half with 2 lettuce leaves; place 1/4 cup sprouts and 5 meatballs in each. Top evenly with cucumber dressing. |
