This is a rich dish which is a meal in one as it is a tantalizing thick stew made with meat, wheat and a whole array of lentils. Preparation time and servings approx as this is a recipe I have not made. Ingredients:
1 kg chicken or 1 kg mutton, cut into small pieces |
1 cup ghee |
1/3 cup barley |
1/4 cup yellow split peas (chana dal) |
1/4 cup split red lentils (masoor dal) |
1/4 cup yellow split lentils (tuvar dal) |
1/4 cup split mung dal |
1 cup bulgur (broken wheat) |
12 -15 cups water |
12 red chilies |
1/2 teaspoon turmeric |
12 garlic cloves |
1 inch ginger |
1 teaspoon salt |
1 teaspoon garam masala |
fried slices onion |

Directions:
1. Soak all the daals& wheat for 3 hours, then wash and drain well Grind red chillies, turmeric, garlic& ginger, salt into a paste Heat ghee, and fry the ground spice paste well Add meat, and stir fry for 5 minutes Add wheat and dals, with 12 cups of water Also add chopped mint and coriander and blend well, adding salt to taste. 2. Simmer on a low flame for 2 hours Serve hot garnished with fried onions, ghee and lemon slices. |
