An extremely tasty Indian rice pudding. Delicious and easy to make. Ingredients:
1/2 cup basmati rice |
2 cups milk |
2 cups coconut milk |
1/2 tsp ground cardamom |
1/4 cup pistachio nuts, chopped |
1/4 cup raisins |
3 tbsp white sugar |
1/2 tsp rose water (this is optional) |
Directions:
1. Combine the milk, coconut milk, and sugar in a large saucepan and bring to a boil. Stir in the rice, and simmer over a low heat until the rice becomes tender and the mixture has thickened, around 20 minutes. 2. Add in the cardamom, raisins, and rose water (if desired); cook for a few minutes more. Ladle the pudding into serving bowls, and garnish with almonds and pistachios on top. Serve. |
