This is a recipe I obtained from a church friend who brought these as a treat for us as one of our potlucks. It was reallly tasty. A little sweet, a little savory. Very different but very good. Ingredients:
2 cups rice flour |
1 cup sugar |
32 ounces canned coconut milk |
1 teaspoon salt |
Directions:
1. Save two tablespoons of the flour. 2. Mix remaining flour with water, 1/2 can of coconut milk to make medium blended mixture. 3. Also mix the rest of the coconut milk with salt and two tablespoons of rice flour. 4. Pour the first mixture in small cups about 1 in diameter. 5. Make sure to leave about 1/4 cup for the topping. 6. Steam cupped mixture for about ten minutes before adding the topping mixture. 7. Continue steaming the cups for another 10 minutes. 8. Take the steamer our of the heat and let it cool down to room temperature. 9. When serving use a small and thin spatula to take out the dessert. |
