If you love KFC's biscuits, then you won't be disappointed when you make these, because they've turned out exactly like KFC's. The key to fluffy biscuits, is buttermilk and the CLUB SODA! Yes Club Soda.. go figure but it activates the baking powder thats already in the mix and makes them rise even higher then you can imagine! Read more ! Enjoy everyone! Ingredients:

1/2 cup solid vegetable shortening, like crisco |
2 tablespoons sugar |
1 teaspoon salt |
1/4 cup club soda |
3/4 cup buttermilk |
2 tablespoons nonfat milk |
4-5 cups bisquik baking mix |

Directions:
1. Preheat oven to 450 F. 2. Lightly grease a baking sheet and set aside. 3. In a large bowl, combine 1/2 cup of shortening, 2 tablespoons sugar, 1 teaspoon salt, 1/4 cup club soda, 3/4 cup buttermilk, 2 tablespoons nonfat milk, and 4 cups baking mix. 4. Combine ingredients until a smooth dough is formed. Additional baking mix may be necessary to achieve a smooth consistency. 5. Transfer dough to a floured surface and knead with flour-coated hands to prevent sticking. 6. Roll the dough until it reaches a thickness of 3/4 inch. 7. Use a floured round cookie cutter, or drinking glass, to cut 18 biscuits from the dough. 8. Evenly distribute biscuits on the greased baking sheet. 9. Bake in the pre-heated oven for about 13 minutes, or until golden brown. 10. Melt butter. 11. Remove the biscuits from the oven and brush the tops with melted butter. 12. Serve. |
