This is a basic key lime pie, not the typical method of making a key lime (or any other) pie. It's a good pie to get 9+ year olds involved in the pie. If Key limes aren't available, you can substitute plain limes. Ingredients:
1 1/4 c cold water |
1 c sugar |
2 tbsp lightly salted butter |
1/4 c cornstarch |
2 1/2 tbsp key lime zest |
1/2 c key lime juice |
3 eggs, room temp, separated |
2 tbsp milk |
Directions:
1. Preheat oven to 425 2. Combine the sugar, 1 c of water, and the butter in a double boiler and heat until steaming (but not boiling) 3. In a small bowl, combine the cornstarch and remaining water to make a paste, and add to the sugar mixture. 4. Add the zest and juice to the sugar mixture and cook, stirring constantly, until thick. 5. In a medium bowl, beat the egg yolks together with the milk. 6. Add a small amount of the hot mix to the egg yolks and blend. 7. Add the yolks to the saucepan and cook, stirring constantly, for about 5 minutes (until the egg flavor is gone). 8. Remove from heat, cool slightly, and pour into an already-baked crust. 9. Spread meringue evenly over the filling, careful to seal the edges. 10. Bake for 12 to 15 minutes, until the meringue is browned. |
