A light version of a popular cool-whip based key-lime pie. Ingredients:
1 envelope unflavored gelatin |
1/4 cup cold water |
1/3 cup lime juice |
12 ounce fat-free lime yogurt |
8 ounce fat-free cool whip |
8 reduced fat graham cracker pie crust (this item is one-eighth of a crust, so just one crust total) |
Directions:
1. Sprinkle gelatin over cold water. Let stand for one minute. Microwave, uncovered, on high for 20 seconds. 2. Stir in lime juice. Add yogurt. Mix well. Fold in whipped topping. 3. Spoon into crust. Cover and refrigerate 8 hours or overnight (if you're impatient, use the freezer for 2 hours!). |
