This is such a delightful pie - made with Eagle Brand sweetened condensed milk - very, very good!! Ingredients:
1 1/4 graham cracker crumbs |
2 tablespoons sugar |
5 tablespoons butter, melted |
4 egg yolks |
1 (14 ounce) can eagle brand sweetened condensed milk |
1/2 cup freshly squeezed key lime juice |
2 tablespoons key lime zest, finely grated |
4 egg whites |
3 tablespoons sugar |
Directions:
1. CRUST: In a bowl, mix graham crumbs, sugar and melted butter. Press into a 9-inch pan. 2. FILLING: Using an electric mixer, mix the yolks, Eagle Brand, Key lime juice and zest, until thickened. Pour into the pie shell and refrigerate overnight until set. 3. MERINGUE: Whisk eggs and sugar to a stiff peak. Spoon or pipe on the pie and bake in a preheated 350F oven for about 12 minutes, or until golden brown. 4. Leave to cool on a rack, then refrigerate. |
