Heavily adapted from /2008/12 /key-lime-pie-oatmeal/ to embrace all that is the south of Florida in the morning! Ingredients:
1/2 cup old-fashioned rolled oats |
1/4 cup skim milk |
1/2 cup water |
pinch of salt |
1 1/2 tsp vanilla |
2 tbsp splenda (or sugar) |
3 tbsp fat-free plain yogurt |
2 tbsp fresh lime juice |
1 tsp lime zest |
1 tbsp psyllium husk fibre |
1 tbsp graham cracker crumbs |
Directions:
1. In a saucepan, heat the oats, milk, water, and salt over medium heat. Bring to a simmer and cook, stirring, about 10-12 minutes. 2. In a separate medium-size bowl, mix the vanilla, Splenda, yogurt, lime juice, and lime zest until well blended. Set aside. 3. When the oats are cooked to your taste (should be creamy and soft), add the psyllium and stir until incorporated. 4. Pour into a serving bowl mix in the yogurt mixture. 5. Sprinkle with graham cracker crumbs and serve. |
