Try something different for breakfast or with your afternoon cup of tea/coffee. Fresh Key Lime Juice works the best. Ingredients:
2 cups all-purpose flour |
1 cup sugar |
1 tablespoon baking powder |
1/2 teaspoon salt |
1/3 cup milk |
2 large eggs, lightly beaten |
1/4 cup vegetable oil |
1 teaspoon grated lime rind |
1/4-1/2 cup key lime juice (don't substitute) |
Directions:
1. Add the first 4 ingredients to a mixing bowl; stir to combine. 2. Make a well in the center of the mixture. 3. In another mixing bowl, combine the milk and remaining ingredients. 4. Add liquid ingredients to dry ingredients; stir until just moistened. 5. Spoon batter into lightly greased muffin cups; fill 3/4s full. 6. Bake at 400° for 18 minutes or until lightly browned. 7. Turn muffins out of pan immediately. |
