Adapted from asweetfantasy.blogspot. com/2008/04/key-lime-cups. html. A great, refreshing summer treat, especially if you take them right from the fridge! Ingredients:
2 tsp cornstarch |
3 tbsp water |
1 1/2 cups green candy coating disks (like merckens), divided |
1 (14-oz) can sweetened condensed milk |
2/3 cup key (or regular) lime juice |
Directions:
1. Place 24 foil mini muffin cups (or candy cups) on a baking tray. 2. Whisk cornstarch and water in a small dish, then microwave 30 seconds on HI, until clear and slightly thickened. 3. Melt 2/3 of the candy wafers. 4. Thoroughly paint the melts up the sides of each wrapper. Chill candy for 10 minutes, then paint a second coating. Chill 10 minutes longer. 5. Beat together condensed milk, key lime juice, vanilla and cornstarch mixture. 6. Spoon generous amounts of curd into each candy cup. 7. Chill 15 minutes longer. 8. Melt remaining coating disks and completely top the filling. 9. Refrigerate 2 hours, until cold. |
