A tasty chicken dish for summer. Ingredients:
6 boneless skinless chicken breasts, flattened |
1/2 cup key lime juice |
3 garlic cloves, minced |
1 inch ginger, minced |
1 cup flour |
1 1/2 teaspoons ground ginger |
1 1/2 teaspoons garlic powder |
1/2 teaspoon salt |
1/2 teaspoon white pepper |
1 cup vegetable oil (for frying) |
1 cup chicken broth |
3 teaspoons lightly packed brown sugar |
Directions:
1. Marinate chicken in a glass dish with the key lime juice, fresh garlic and ginger-cover and let stand 2 hours turning once. 2. Remove chicken and reserve marinade. 3. Mix flour, ground ginger, garlic, salt and pepper. 4. Heat oil over med-high. 5. Dredge chicken in flour mixture and brown in oil. 6. Transfer to a 9x13 casserole dish. 7. Pour reserved marinade over chicken along with the broth. 8. Sprinkle brown sugar on top and bake for 30 minutes in a 375° oven. 9. Do not let broth totally evaporate. 10. Remove to a serving platter and pour remaining broth over chicken. |
