A nice twist on key lime pies; a cake. Key Lime Cake is just as good as the pie. I have put one of my pictures up and 2 of others to show you the look of a Key Lime Cake. If you Love Key lime Pie you will love this. Ingredients:
1 1/3 cup granulated sugar |
2 cup flour |
1/3 tsp salt |
1 tsp baking powder |
1/2 tsp baking soda |
1 small box lime gelatin |
5 eggs |
1 1/3 cup cooking oil |
3/4 cup orange juice |
1/2 tsp vanilla extract |
1 tsp lemon extract |
glaze |
1/3 cup key lime juice |
1/3 cup confectioners' sugar |
whipped cream (garnish) |
key lime slices (garnish) |
Directions:
1. Preheat oven to 350 degrees. Place dry ingredients into mixing bowl. Add eggs, oil, orange juice, vanilla extract and lemon extract. 2. Beat until well blended. Pour batter into a 9 x 13-inch pan and bake for 25 to 30 minutes. 3. Remove cake from oven. Let stand in pan 15 minutes or until almost cool. Prick cake all over with fork. Drizzle thoroughly with Glaze. Cover and refrigerate. 4. To serve, cut into squares and top with whipped cream and lime slices. |
