My friend, Lynne, from the Hatboro YMCA gave me this recipe. The loaf she shared at the Y was wonderful! Ingredients:
2/3 cup butter, softened |
2 cups sugar |
4 large eggs |
2 tablespoons key lime or regular lime zest |
2 tablespoons key lime or regular lime juice |
1 teaspoon vanilla extract |
3 cups all-purpose flour |
3 teaspoons baking powder |
1 teaspoon salt |
1 cup milk |
1 cup chopped walnuts (optional) |
glaze |
2/3 cup confectioners' sugar |
1 to 2 teaspoons lime juice |
Directions:
1. Coat two 9x5x3 loaf pans with cooking spray. 2. Preheat oven to 350 degrees F. 3. Cream together sugar and butter until smooth. 4. Add eggs. 5. Beat well. 6. Add lime zest, lime juice and vanilla. 7. Mix well. 8. Combine flour, baking powder and salt in a bowl. 9. Add flour mixture alternately with the milk into the butter mixture. 10. Fold in walnuts, if desired. 11. Divide batter between two prepared pans. 12. Bake for 50 to 55 minutes OR until bread tests done. 13. Remove from oven. 14. Cool breads 10 minutes in pans. 15. Remove from pans. 16. Drizzle glaze over warm breads. |
