2/3 cup butter, softened |
2 cups sugar |
4 eggs |
2 tablespoons lime zest |
2 tablespoons key lime juice |
1 teaspoon vanilla extract |
3 cups all-purpose flour |
3 teaspoons baking powder |
1 teaspoon salt |
1 cup milk |
1 cup chopped walnuts |
2/3 cup confectioners' sugar |
1 -2 tablespoon key lime juice |
Directions:
1. In a large mixing bowl, cream butter and sugar. 2. Add eggs; mix well. 3. Add lime peel, juice and vanilla; mix until combined. 4. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. 5. Fold in walnuts. 6. Transfer to two greased 9-in. x 5-in. x 3-inch loaf pans. 7. Bake at 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean. 8. Cool for 10 minutes before removing from pans to wire racks. 9. Combine glaze ingredients; drizzle over warm bread. 10. Cool completely. |
