Ingredients:
1 cup butter, softened |
1/4 cup powdered sugar |
2 teaspoons key lime juice |
2 teaspoons grated key lime peel |
2 cups all-purpose flour |
1/4 teaspoon salt |
1/2 cup chopped macadamia nuts |
2 cups powdered sugar |
1/4 cup key lime juice |
1 teaspoon grated key lime peel |
Directions:
1. In a large bowl, cream butter and powdered sugar until light and fluffy. 2. Beat in lime juice and peel. 3. Combine flour and salt; gradually add to creamed mixture and mix well. 4. Stir in nuts. 5. Shape into 1-inch balls. 6. Place 2 inches apart on ungreased baking sheets; flatten slightly. 7. Bake at 400° for 8-10 minutes or until bottoms are lightly browned. 8. Remove to wire racks to cool completely. 9. In a small bowl, combine the icing ingredients. 10. Dip cookies in icing; allow excess to drip off. 11. Place on a wire rack; let stand until set. 12. Store in airtight container. |
