Make the millet the night before and this is a quick and nutritious breakfast. Zap the millet in the microwave or toss it around in a frying pan, then add the other ingredients. Eat more grains! Ingredients:
1 c. millet |
raisins, soaked overnight |
dried apricots, thinly sliced |
honey or maple syrup to taste |
1 tsp. butter (opt) |
Directions:
1. The flavor of millet is enhanced by lightly roasting the grains in a dry pan before cooking; stir constantly for approximately three minutes or until a mild, nutty aroma is detected. 2. Cook millet as you would rice, using 3 cups of water to 1 cup of millet for 30 minutes. Check for doneness after the 30 minutes. Don’t peek!
