These look divine! From the Kerrygold web site (they make the BEST butter ever!!!) Note: You can substitute Kerrygold Pure Irish Butter with Garlic and Herbs and omit fresh herbs Ingredients:
1/4 cup kerrygold pure irish butter, divided |
1 lb beef tenderloin steak, 1 1/2 to 2-inches thick |
3 tablespoons stone ground dijon mustard |
2 tablespoons fresh rosemary or 2 tablespoons fresh thyme, chopped |
1 1/2 teaspoons pepper, coarse ground |
24 slices baguette |
Directions:
1. Heat oven to 400°F 2. In ovenproof skillet, melt 1 tablespoon of the butter. 3. Sear steaks over medium-high heat about 2 minutes each side. 4. In bowl combine remaining butter, mustard, herbs and pepper. 5. Spread 1 tablespoon of the mixture onto the baguette slices; spread remaining on top and sides of steaks. 6. Bake steaks 8 to 10 minutes, remove from oven and let stand 5 minutes. 7. Thinly slice on the diagonal and place on baguette slices, dividing equally. |
