A super moist apple cake from the family recipe collection. Tons of apple and spices make this one vanish in a hurry. Ingredients:
1 1/2 sticks butter |
1 cup caster sugar (see note) |
2 eggs, beaten |
1 cup self-raising flour |
2peeled and cut into 1/2 inch chunks |
1tsp lemon rind |
pinch cinnamon |
pinch nutmeg |
Directions:
1. Preheat oven to 350°F, and grease and line a 2lb loaf pan. 2. Cream together the butter and sugar. 3. Add the Eggs. 4. Gradually add the flour. The dough should be very sticky and wet. 5. Stir in the apples and lemon rind. 6. Fill the bread pan about 2/3 full, sprinkle with cinnamon and nutmeg, and bake for 90 minutes. 7. Note: Caster sugar is a superfine sugar and is available in the baking aisle. If you do not want to make a trip to the store, simply grind regular sugar in the food processor for about 3-4 minutes. |
