This is a nice twist from the ordinary eggplant. Creamy and oh so good. Enjoy Ingredients:
1 large eggplant |
1/4 cup chopped onion |
3 tablespoons chopped parsley |
1 can cream of mushroom soup |
1 teaspoon worcestershire sauce |
1/2 teaspoon salt |
1 cup cracker crumbs |
2 tablespoons butter |
Directions:
1. Peel cube and cook eggplant then mix with onion, parsley, soup, Worcestershire and salt. 2. Put in a greased casserole dish. 3. Stir together cracker crumbs and butter then spread on top of casserole. 4. Bake at 375 for 45 minutes. |
