Kentucky Breakfast Soufflé

Delicious, easy to make the night before recipe. Always a crowd pleaser. Similar to Shakertown's recipe but I've modified it a bit.
Ingredients:
16 ounces pork sausage (mild or maple)
9 eggs, slightly beaten
3 cups milk
1 tablespoon yellow mustard
1 teaspoon salt
3 slices bread (cut into 1/8-inch cubes or can be torn by hand into small pieces)
2 cups cheddar cheese, grated
Directions:
1. Brown sausage and drain. Spread in a 9 x 13 x 2 pan.
2. Mix all other ingredients and spread over sausage. Cover pan and refrigerate overnight.
3. Bake uncovered at 350 degrees for 30 minutes to 1 hour (varies by oven).
