Kens Green With Envy Tomatillo Sauce |

Ingredients:
1 1/2 # tomatillos |
2 cloves garlic |
1 jalapeno, halved and seeded |
1 serrano chile, halved and seeded |
salt and pepper, to taste |
4 tbsp evoo |
1/2 cup cilantro |
1-cup chicken stock |
Directions:
1. Preheat the oven to 450 2. Skin the tomatillos and wash clean 3. In a large bowl, combine the tomatillos, garlic cloves, jalapeno, Serrano, salt, pepper, and evoo. Combine thoroughly. 4. Roast in the oven for 40-45 minutes 5. Let cool for 10 minutes 6. Pour ingredients into a blender and puree 7. Add cilantro and taste to see if more salt is needed, blend once more 8. The sauce will be thick, to thin add 1 cup chicken stock and blend to combine, add more stock if necessary. |
