Chicken and Pasta
Ingredients:
24 ounces chicken
1 medium yellow bell pepper
1 medium red bell pepper
1 medium orange bell pepper
1 medium onion
1 lb spinach
12 ounces fire roasted peppers
1 lb organic whole wheat penne
2 tablespoons olive oil
1/4 teaspoon salt
Directions:
1. Pour one tbsp olive oil in pan and heat.
2. Slice onions and all bell peppers and add to pan.
3. Grill Chicken until cooked - cut up when done.
4. Boil water with salt and add pasta. Drain pasta when cooked and add peppers, onions, spinach (uncooked), fire roasted tomatoes and chicken. Mix well - serve.
