If you visit historic Kenmore Mansion in historic Fredericksburg Virginia, you may have an opportunity to try this gingerbread. Kenmore was the home of George Washington's sister, Betty, and her husband Fielding Lewis, who were also prominent figures during Revolutionary War times. Ingredients:
1/2 cup butter |
1/2 cup brown sugar |
1 cup molasses |
1/2 cup warm milk |
2 tablespoons ground ginger |
1 teaspoon cinnamon (heaping) |
1 teaspoon ground mace (heaping) |
1 teaspoon nutmeg (heaping) |
2 to 3 ounces brandy |
3 eggs |
3 cups flour |
1 teaspoon cream of tartar |
1 teaspoon baking soda |
1 large orange |
1 cup raisins (optional) |
Directions:
1. Cream butter and sugar in a large bowl. 2. Add molasses, spices and brandy and mix until combined. 3. In another bowl, beat eggs until they are thick and then beat into butter mixture. 4. Add cream of tartar and baking soda to flour, then add flour mixture to butter mixture alternately with milk, combining well after each addition. 5. Grate the colored peel from the orange and add to batter. 6. Squeeze juice from orange and mix into batter. 7. Add raisins if desired. 8. Pour batter into a greased 9 x 13 pan. 9. Bake for 30 minutes in a preheated 350 degree oven, or until toothpick inserted in center comes out clean. 10. Cool slightly then serve. |
