This recipe came about after I asked Keni to help me out with a dressing recipe. I told her that I wanted the base to be fresh lime juice. And this recipe is what she came up with for me. Exactly what I was hoping for. Read more . Delicious and quick. Great on my salad and I bet this would be really good as a dressing on a cold bean salad as well. Recipe can also be doubled or tripled easily. Thanks Keni! Ingredients:
1/4 c. olive oil |
1 fresh lime juiced |
1 tblspn. of honey |
1/2 tsp.chili powder |
1/8 tsp. cumin |
salt and fresh cracked pepper to taste |
1 lg. garlic clove fine minced |
1 tsp. fresh lime zest |
a splash of vinegar is suggested as needed or to taste (optional) |
fresh herbs could also be added such as mint to taste (optional) |
Directions:
1. Add olive oil, lime juice, honey, chili powder, cumin, salt and pepper, garlic, and lime zest into a spill proof jar or container with a lid. 2. Shake well unitl all ingredients are mixed and honey is incorporated. 3. Add optional ingredients if you wish. 4. Refrigerate after using. 5. Enjoy! |
