This potato salad recipe is handed down from my mother. It is creamy and the mustard gives it an extra kick. Very delicious. My family loves this salad! Ingredients:
2 large red potatoes |
2 stalks celery- diced |
2 green onions- diced |
1 large white or red onion- diced |
4 eggs |
8 oz. sour cream |
3/4 cup mayonnaise |
2 tbs. mustard |
salt and pepper to taste |
paprika for garnish |
Directions:
1. Cut potatoes into chunks 2. Boil them in a pan of water for 10 minutes then take off the heat and let sit in the hot water for another 15 minutes 3. Boil the eggs until done and peel 4. Mix sour cream, mayo, mustard, salt and pepper together first in the bowl 5. Fold in the diced celery, onion and 3 of the diced eggs 6. Fold in the potatoes once cooled enough 7. Slice the 4th egg on top 8. Garnish with Paprika if desired |
