This recipe is great because it makes two pies, one is never enough! I've tried several Derby Day pies, and ended up combining a few to result in this one. Ingredients:
2 pie crusts |
2 cups chocolate chips |
3 cups pecans, total-1 1/2 for each crust (lightly chopped) |
3 eggs |
3/4 cup white sugar |
1/4 cup brown sugar |
1 1/2 teaspoons vanilla |
3 -4 tablespoons flour |
1/2 cup light corn syrup |
1/2 cup butter |
Directions:
1. Beat eggs. 2. Add sugars, vanilla, corn syrup, butter and flour. Mix. 3. Spread nuts and chocolate chips into each pie crust. (I put my chips on the bottom, then layer the nuts on top). 4. Pour Â1/2 egg mixture over top of chocolate chips and pecans straight into crust, for each pie. 5. Bake at 350 degrees for 50 minutes-make sure the middle is set! |
