My sister, Kat makes this at Easter with ham. It's old fashioned mustard potato salad. She just uses plain French's mustard and Miracle Whip. It's delicious with BBQ or ham at Easter. Ingredients:
5 -6 large idaho potatoes |
1/3 cup miracle whip |
3 tablespoons yellow mustard |
3 stalks celery |
1 large onion (i use white, but red tastes good too) |
1 (3 ounce) jar pimientos (chopped) |
2 tablespoons dill relish or 2 tablespoons sweet relish |
2 hard-boiled eggs |
Directions:
1. Cut potatos in small chunks (peeled or unpeeled). 2. Combine potatoes in large mixing bowl with chopped celery, chopped onion, pimento, relish and eggs. 3. Add MIracle Whip and yellow mustard. 4. Salt and Pepper to taste. 5. Cover and chill for at least 2 hours (overnight is better). 6. Serve. |
