Eggplant and chicken curry
Ingredients:
85 grams curry paste
300 grams eggplant
50 grams mushroom
50 grams carrots
180 grams chicken breast
1 t. oil
3 c. water
Directions:
1. chop vegetables and chicken
2. place all ingredients except rice in a slow cooker and simmer for 1 to 2 hours
3. serve next to rice
