A long time ago I was a long distance operator and I worked with a girl named Kathy. She was the best baker and her carrot cake is delicious. Moist and flavorful. I have had this recipe for 30 years try it I think you'll like it.
Ingredients:
2 cups flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 cups white sugar
1 1/2 cups oil
4 eggs
2 cups grated carrots
8 1/2 ounces crushed pineapple (drained)
1/2 cup nuts, cut fine
Directions:
1. sift flour, baking powder, soda, salt and cinnamon together. Add sugar, oil, and eggs. Mix well. Add carrots, drained pineapple and nuts. Pour into three 8 or 9 inch cake pans, greased and floured. Bake at 350 for 40 minutes.
