Kathy Jo's Fair Champion Apple Pie |

Guess where that is from. Yep the local fair. The local contest. The champion pie in the pie divison. Ingredients:
5 tablespoons small pearl tapioca |
5 cups sliced apples |
1 1/4 teaspoons cinnamon |
1/4 teaspoon cinnamon |
1/4 teaspoon ground nutmeg |
1/2 cup sugar |
2 tablespoons flour |
Directions:
1. Soak tapioca in 2/3 cup cold water for one hour. {Phil's note: I can almost promise you this is NOT the quick cook kind}. 2. Then add the rest of the ingredients and mix well. 3. Put in an unbaked pie shell [9 inch, I assume if not tell me Phil] Top with crumbs. 4. Bake at 400°F for 15 minutes then lower to 350° for 35 minutes. |
