Here's my favourite banana bread recipe slightly altered from extraveganza, a much used book in our kitchen. Ingredients:
1 cup whole wheat flour |
1 cup unbleached white flour |
1 tsp baking powder |
1/2 tsp baking soda |
1/2 tsp fine sea salt |
2 tsp cinnamon |
1/2 c vegetable oil |
1/2 c sugar |
1 tsp vanilla |
1 c. vanilla soy milk |
2 bananas, mashed |
1 t cider vinegar |
1/3 cup raw pumpkin seed |
Directions:
1. mix dry, mix wet, mix together. 2. bake 350 in a prepared 9x9 pan (loaf pans usually make 3. the batter too deep to bake well) for about 40 min. 4. EAT IT. |
