Ingredients:
3/4 cup sugar |
1/2 cup vegetable shortening |
1 cup maple syrup |
1 teaspoon vanilla extract |
2 eggs |
2 cups regular oats |
1 cup all-purpose flour |
1/4 cup flaked sweetened coconut |
1 teaspoon baking powder |
1/2 teaspoon salt |
vegetable cooking spray |
Directions:
1. Cream sugar and shortening at medium speed of a mixer until light and fluffy (about 5 minutes). Add syrup, vanilla, and eggs; beat until well-blended. Combine oats and next 4 ingredients; stir well. Add to creamed mixture, stirring just until dry ingredients are moistened. 2. Pour batter into a 13 x 9-inch baking pan coated with cooking spray. Bake at 350° for 40 minutes or until a wooden pick inserted in center comes out clean. |
