Kate's Spinach Baguette Sandwich |

Very simple sandwich. Very good too. Ingredients:
1 six-inch baguette |
1/2 cup baby spinach |
1 tablespoon balsamic vinegar |
2 tablespoons cream cheese |
1/2 teaspoon dried basil |
Directions:
1. Cut the baguette in half, longwise. 2. Rinse the spinach, squeeze it flat between both hands, and dry it gently between two paper towels so that it retains its shape. 3. Spread the cream cheese on the bottom half. 4. Put half the spinach on top and cover it with half the balsamic vinegar. 5. Put the other spinach over that and cover it with the rest of the vinegar. 6. Sprinkle the basil over the top. |
