A (slightly!) healthier version of the ol' Rice Krispy Marshmallow Treats.... Ingredients:
3 tablespoons butter |
3 cups marshmallows |
1 teaspoon vanilla extract or 1 teaspoon almond extract |
3 cups puffed wheat cereal (e.g. unsweetened puffed kashi) |
1 cup cashew pieces |
Directions:
1. Melt butter in a large saucepan over medium heat. 2. Add marshmallows and stir constantly until melted,, approximately 4 minutes. Stir in extract. 3. Add puffed wheat cereal and cashews and stir until thoroughly coated. 4. Using oiled spatula, press evenly into oiled 10x8x2 pan. 5. When cool, cut into 2-inch squares. |
