Kasha Breaded Chicken Cutlets |

The is a great chicken cutlets recipe with a healthy twist and nutty flavor. Ingredients:
4 boneless chicken breast halves |
1/2 cup buckwheat groats (kasha medium granulation) |
1/4 cup breadcrumbs (any style you like) |
1/4 cup wheat germ |
1/2 teaspoon salt |
2 tablespoons olive oil |
2 eggs, beaten |
1 -2 garlic cloves (optional) or 1/4 teaspoon garlic powder (optional) |
1/4 teaspoon black pepper (optional) |
Directions:
1. Pound chicken to flatten (don't over do it). 2. Mix toghter buckwheat, breadcrumbs & wheat germs. 3. Add salt & pepper to kasha & bread crumbs mix. 4. Dip chicken into beaten eggs and then coat with kasha & bread crumbs mix. 5. In a large skillet, heat oil over medium heat. 6. Saute crushed garlic until golden (you can then discard garlic if you like). Instead of crushed garlic you can add 1/4 teaspoon garlic powder to the kasha & bread crumbs mix. 7. Place chicken in skillet cook about 5 minutes on each side, or until chicken is golden/brown on both sides. 8. Actual cooking time will vary depending on how thick your chicken is, make sure cutlet is fork tender. |
