(Russion roast Potato)
Ingredients:
1/2 tablespoon margarine
1/2 tablespoon vegetable oil
10 oz potatoes, sliced
1 teaspoon mixed herbs
1 salt and pepper, season to taste
Directions:
1. Heat the margarine and oil until sizzling. Add the potatoes and fry quickly until golden brown, but not cooked through, turn slices and sprinkle generously with salt and pepper. Cover the pan, lower the heat and continue to steam/fry the slices for 20 minutes, shaking the pan occasionally to prevent them sticking, until tender. Take the lid off the pan and turn the heat up again for a minmute or two. Serve immediately.
