A smple yummy corn fritter! Courtesy of Karen Bressler. Ingredients:
2 (16 ounce) cans creamed corn |
2 teaspoons salt |
1/4 teaspoon paprika |
1 cup flour |
2 eggs |
1 teaspoon baking powder |
Directions:
1. Combine dry ingredients. 2. Add corn to dry ingredients. 3. Beat 2 egg yolks till thick and add to corn mixture. 4. Fold in egg whites. 5. Drop by tsp full in deepfat fryer at 365 F for 4-5 minutes. 6. Or drop by spoonfuls into frying pan of oil for 5-6 minutes. |
