Kansas Style Potato Salad |

3 lbs. red potatoes, cut into 1/2 pieces |
3 tbsp. kansas city dry rub |
1-1/2 tsp. salt, divided |
1/4 cup kansas city barbecue sauce |
3 tbsp. canola oil |
2 tbsp. cider vinegar |
2 tsp. prepared mustard |
1 cup finely chopped celery |
1/2 cup finely chopped onion |
1/4 cup finely chopped fresh parsley |
1/2 tsp. black pepper |
zest of 1 lemon |
Directions:
1. Place potatoes in a large saucepan, cover with water. 2. Stir in Kansas city Dry Rub and 1 tsp. salt. 3. Bring to a boil. 4. Reduce heat and simmer 15 minutes or until tender, drain well. 5. Combine Kansas city Barbecue Sauce, oil, vinegar and mustard in a large bowl, stir with a whisk. 6. Add warm potatoes and toss to coat. 7. Add remaining 1/2 tsp.. salt, celery, onion, parsley and pepper. 8. Toss to combine. 9. Top with lemon zest. 10. Let stand 20 minutes before serving |
