From the local newspaper. Ingredients:
2 cups whole kernel corn |
2 eggs, beaten |
1 (16 ounce) can cream-style corn |
1 cup evaporated milk |
1/4 cup butter, melted |
1/4 cup scallion, chopped |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 cups saltine crackers, coarsely crushed |
12 ounces monterey jack cheese, diced |
Directions:
1. Combine all ingredients except crackers and diced cheese in large mixing bowl. 2. Fold in crackers and cheese. 3. Spoon into greased 2-quart baking dish. 4. Bake at 325 degrees for 1 hour or until set. 5. Let stand 5 minutes before serving. |
