Takes a little time to make.. but worth it... this was based off a recipe in La Dolce Vegan.. but my friend and I modified it to help it hold together better... Ingredients:
1 medium onion |
1 tablespoon olive oil |
1 -2 garlic clove, chopped |
2 cups kale, chopped |
2 cups broccoli, chopped |
1 large carrot, chopped |
1/4 cup vegetable stock |
1 tablespoon soy sauce (braggs aminos) |
1/2 teaspoon salt |
3 -4 slices bread, chopped |
3/4-1 cup vegan cheese, grated |
1 cup firm tofu |
4 tablespoons olive oil |
2 tablespoons soy sauce (braggs aminos) |
2 teaspoons dried basil |
2 teaspoons dried oregano |
1 teaspoon hot sauce |
1/2 teaspoon salt |
1/2 teaspoon pepper |
2 -3 slices bread, chopped |
1/2 cup vegan cheese, grated |
1/2 cup firm tofu |
2 tablespoons olive oil |

1 teaspoon dried basil |
1 teaspoon dried oregano |
1 teaspoon hot sauce |
1/4 teaspoon salt |

Directions:
1. Heat oven to 350. 2. oil an 8x8 pan. 3. saute onions in oil on medium heat. 4. add garlic, kale, broccoli, carrots, vegetable stock, soy sauce and salt. |
