Takes a little time to make.. but worth it... this was based off a recipe in La Dolce Vegan.. but my friend and I modified it to help it hold together better...
Ingredients:
1 medium onion
1 tablespoon olive oil
1 -2 garlic clove, chopped
2 cups kale, chopped
2 cups broccoli, chopped
1 large carrot, chopped
1/4 cup vegetable stock
1 tablespoon soy sauce (braggs aminos)
1/2 teaspoon salt
3 -4 slices bread, chopped
3/4-1 cup vegan cheese, grated
1 cup firm tofu
4 tablespoons olive oil
2 tablespoons soy sauce (braggs aminos)
2 teaspoons dried basil
2 teaspoons dried oregano
1 teaspoon hot sauce
1/2 teaspoon salt
1/2 teaspoon pepper
2 -3 slices bread, chopped
1/2 cup vegan cheese, grated
1/2 cup firm tofu
2 tablespoons olive oil
1 tablespoon soy sauce (braggs aminos)
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon hot sauce
1/4 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Heat oven to 350.
2. oil an 8x8 pan.
3. saute onions in oil on medium heat.
4. add garlic, kale, broccoli, carrots, vegetable stock, soy sauce and salt.
