Kale With Smoked Turkey Wing |

This is a zesty kale dish that I make for my family, usual in the fall of the year. We ladle it up on some rice and pass the hot sauce... It's yummy and a great way to take advantage of the lower turkey parts prices that occur in November and December. Ingredients:
3 pounds kale greens, cleaned, washed and chopped |
2 tablespoons sugar |
3 tablespoons italian dressing, clear-style works best |
1/2 teaspoon black pepper |
1 teaspoon salt |
1 smoked turkey wing, separated into sections |
1 quart water |
2 teaspoons red wine vinegar |
1 teaspoon olive oil |
few shakes of hot sauce |
Directions:
1. Place first six ingredients in a very large pot. 2. Cover with the water. 3. Bring to a rolling boil. 4. Stir to make sure nothing is sticking to the bottom of the pot. 5. Reduce heat to a low simmer. 6. Cover the pot, loosely. 7. Simmer for about 2 and 1/2 hours, checking every so often for sticking. 8. When done, add vinegar, oil, and hot sauce, stirring carefully. 9. Serve over steamed white rice and pass additional hot sauce. |
