Kale With Garlic And Cranberries |

Another recipe I found in the newspaper; going to try this week (originally from Joy of Cooking ) Ingredients:
2 lbs. kale, stems & center ribs discarded, leaves coarsely torn |
1 tbsp. minced garlic |
5 tbsp. olive oil |
1/2 cup dried cranberries |
3/4 tsp. salt |
1/8 tsp. pepper |
Directions:
1. In 6-qt. pot of boiling water, cook kale, uncovered, until almost tender (5-7 minutes) 2. Drain, transfer to cold water bath so stops cooking 3. When cool, drain - do not squeeze 4. In same pot, over medium heat, cook garlic in oil, until fragrant 5. Add kale, dried cranberries, salt and pepper, tossing frequently, until kale tender 4-6 minutes |
