Found a similar recipe somewhere else but substituted in the pears over apricots or other dried fruit. I like the crispness better. Ingredients:
120 g kale |
1/3 cup almonds |
1 medium avocado |
1 medium pear |
1/3 cup black beans |
2 tablespoons olive oil |
3 tablespoons red wine vinegar |
1 teaspoon salt |
1 ounce parmesan cheese |
Directions:
1. Soak Kale, remove stems, and tear into small pieces. Add everything else and mix together, leaving avocado for last, just putting it on top with a pinch of salt. |
