Kale & Mushroom Quiche

good as a frittata or a quiche Adapted from Tea & Cookies
Ingredients:
4 cups kale
6 oz mushrooms sliced
1/4 cup chopped parsley
1 tbs olive oil, for sautéing
5 eggs, beaten
1/2 cup milk
1 cup feta cheese
1 1/2 tsp salt
1 dash pepper
Directions:
1. Sauté the vegetables in the olive oil, starting with the onions, adding the greens (cut into rough ribbons) once the onions are limp. Add the salt and any fresh herbs you may be using. Sauté until wilted and soft.
2. In a large mixing bowl crack and beat the eggs. Add the vegetables, cheese, and pepper.
3. Pour into a well-oiled 12-inch quiche pan or cast iron skillet or a prepared crust. Bake at 350° until the center has set and no longer jiggles if you shake the pan. There may be some minor browning around the sides, this is fine.
